In the field (on the boat) I use a rubber door mat that has little rubber nubs sticking up. Holds the fish in place, easy to sanitize, and doesn't dull my blade. At home I use the poly cutting boards, often with an old bath towel on the to deal with the slip and slime.

Lots of options here and it depends somewhat on what type of cure it is. As far as a storage vessel, my preference is a one quart wide mouth jar. I'll be there, plus 2 at least. Happy to go on foot or I can bring the drift boat and hit areas that cannot be reached from shore. Sent an email to several fishing friends/coworkers about it too so I should have more volunteers soon.

I used to live close to the Landsburg bridge and would fish it quite often. I found that early mornings and late evenings were best this time of year.
