I was recently fishing for Kokanee over in North Idaho. We caught a few Kokanee and some had pink meat and a few had very dark red meat. I am curious what the difference is ? Is it a male female thing? Spauwning or or not? Also does anyone think the flavor is different? We smoked a few up and now I know what heaven taste like ! :bom:

The color variation is likely due to what they have been eating and how much. The flavor may be slightly different. It may also have to do in part with where the fish are resting in the water column.

Mostly the food. The Salmon family cannot easily remove carotene from their bodies, yes, the same carotene found in Carrots, and Scuds, and Plankton, and ..............
Pink and Red fleshed fish eat the food and it stays with them, for some time. Ever notice a late season Steelhead getting light or even white? It has not been eating for quite some time so it is able to remove most of the carotene.
White fleshed fish, like Bass and Walleye, can easily remove carotene from their system.
In fact, Lake Trout may be very white if they eat fish, and very red if they eat scuds. Priest Lake in Idaho is a perfect place to catch both phases. I hate the white, love the red Lakers in Priest.
