Salmon Burgers

About a month ago I was watching the news and a story on Costco's food quality. The story made it to "Salmon Burgers". They are made with Chum and Pink salmon and not bad at all. They are made by Trident Seafoods. I get some buns with tartar sauce, tomato , lettuce, and a sliced pickle. It makes a quick and healthy sandwich.I put a Salmon burger on the George Foreman.. ( I love the way they call Chum a Keta.)

I make salmon burgers out of Pink salmon (or any left over salmon in the freezer that's in need of use). Will bake it, flake it, and vacuum seal it by the pound, then can thaw a pouch and mix it like one would crab cakes before grilling, broiling or pan frying. They're good on their own or on a bun like you described. Something different.

Do you guys flake the salmon then make a patty out of it or just cook a slab of the fish meat with some spices?

The patties I was talking about come from Costco all pre made using Keta alias Chum and pinks. When I make my own I bake the salmon then mash it like you would tuna. I add bread crumbs , eggs, diced onion, chopped parsley, and eggs. I form patties and fry them. I serve them with lemon wedges and cocktail sauce.

I like your name Fishho. Hahaha. The other thing when I make patties I don't use Chum. I use Sockeye, Coho or King mixed with Pink salmon. I prefer good fish to cook with Our Chum around here is just crab bait for me. I only eat the eggs.

I prefer fish as it is, but my wife loves it in burgers as well; so I've created a special recipe for her, with TWO sorts of fish:
-Bun (rye bread if possible)
-Tartar or cocktail sauce
-Goat cheese
-Smoked salmon in thin slices
-Tomatoes
-Tuna patty
-Goat cheese
-Lettuce
-Tartar or cocktail sauce
-Bun

Are the salmon burgers fantastic? No. When I'm not in the mood to cook or prepare a full meal I use the salmon burgers. A lil tarter, some ketchup on a bun with lettuce tomatoe onion it passes as a good fast dinner.

Oh, sorry, I got mistaken and, as a non-native English speaker, I forgot that the word "burger" can be used for the patty itself as well, and not just for the whole sandwich. So, yes, salmon in burger patties isn't necessarily great, it's mostly low quality fish that's used, I do fishburger sandwiches only with salmon slices, and do the patty out of tuna or something else.
