What is a good and tasty way for cooking kokanee?

I had just gone out with my brothers and my grandpa fishing for kokanee. We ended up catching about ten of them and they are now filets in my freezer. I was just wondering, how should I cook them?

Freied in a pan covered with cracker crumb's and flour is prefect with trout filet's.

cook it like you would any other trout.

We always gutted and cut off the kokes head. So we either cooked them like you would do a rainbow, or we would smoke them. I dont know if you can smoke fillets that small, but it is excellent smoked

Next time you get some Kokes don't fillet them.Just gut and remove the scales and put them bad boys on the smoker. If you try to smoke the fillets you have, they will dry out like the sole of a boot.

gotta brine them then smoke them, prett darn good that way for being a pink fish. better than salmon in my opinion.
