A Berry Good Year

So far the local berries have been good and a little less priced then last year. I made both strawberry and raspberry jam. I made the low sugar variety. Some with Splenda and the other with splenda/sugar combo. Splenda on its own makes the jam not real transparent so I add a couple Tblspns or regular sugar . That clears it up right away. Besides the berries I made Mango /pineapple jam as well.

This weekend was raspberry jam and strawberry jam. While the weather is crummy and the fish arent cooperating its a great time to get the jams done. This year all low sugar to no sugar. I learned a sweet lil trick to do with Splenda.Add 2 tblspns of sugar to get rid of the cloudy looking jam.
