Filleting a Perch, the Easy Way
After spending way too long filleting last weekends perchfest spoils I figured there had to be a better way. After a brief search on YouTube I found this method. Typically I am good with a knife and have filleted thousands of fish (deckhand/cook on a SoCal sport boat) but filleting the smaller fish has always been time consuming. This method rocks and I can't wait to try it out on our next bucket of yellow perch.

When caught a few perch w/my grand kids this summer I kept a few and used this same video. Works great.

I like an electric knife when cleaning a big batch of perch. My grandfather always used one and could tear through a 5 gallon bucket of perch in no time. I'm not quite there yet but it has sped up the process a lot, I still take the ribs off and cut the pin bones out with a fillet knife though.

thanks, learned something new. I cut behind the gillplate first. His method is a better way.

Dredging up an old post, but do you guys remove the pin bones from perch or are the small enough you leave them in?

This isn't filleting, simply cleaning and the actual time taken is longer than the claim, but it is a pretty neat way to clean perch:
