Rhubarb
Im picking lots of fresh tender Rhubarb now.I found a very easy recipe for making rhubarb cobbler.
Filling
3 cps rhubarb diced
1-2 tblsp unbleached flour
1/2 cup sugar
1 tsp cinnamon
(I like my rhubarb a lil more chuncky then diced)
1/8 tsp salt
1 tblsp water
Topping
6 tblsp butter
6 tblsp unbleached flour
1/2 cup brown sugar
1/2 cup rolled oats
combine first 6 ingredients and mix. Preheat oven to 350 degrees and use a 9x2x6 in glass baking dish. Put in your filling then cover with topping. Bake aprox 40 minutes or till the top browns. Try it. Its very refreshing dessert.

Thanks, Racfish. Printed it out for the "Mrs" to try. What time do you plant your rhubarb? And do you do seeds or starts? I'm an old fart who is totally new at gardening, but grew some pumpkins to harvest with our grandson last fall and really enjoyed it, so adding a couple other things this year. Thanks!

You can plant rhubarb now. I was at Carpinitos in Kent and they had really nice starts. I believe 4/ $12.00. I planted mine 3 seasons ago. They love sun.In my younger days we used to make rhubarb wine. I use it in pies,jams and crumbles as I showed. If you want it sugar free just use a lil more flour to thicken the filling.

During the spring my wife makes a great Rhubarb/Strawberry pie. We have been using the same Rhubarb plant now for over 50 years.

We call that Rhubarb Crisp at my house. Cobbler is more of a dumpling type topping

The recipe I followed called it a crumble. I call it a Crisp also like Apple Crisp.
