Question. Can you put frozen trout in a smoker? I just got my new mini-chief put together and have about 10 trout cleaned and in the freeze. Should I thaw them out in the fridge for a day before smoking? Thanks!

Did your smoker come with directions and any recipes for brines? You probably should thaw them out in the fridge (don't toss them in the sink or open air to thaw), and soak them for a bit in a brine of some sort.

Methods and opinions will vary, but I leave mine in the brine for anywhere from 12-24 hours, then rinse them off, and air dry them in the fridge for a day. Then toss them in the smoker. Whether right wrong or indifferent...seems to work for me. Surf around the net, and google "smoking trout" and "smoked trout" you should find some decent information.

I don't want to hijack this thread but I got a brinkman electric smoker for christmas and I'm using it right now. The question I have is all of the directions in the brine mix and the package the smoker came in give me selected heating temperatures but my model doesn't come with a built in thermometer so how am I supposed to know what the internal temperature of the smoker is? Is there an aftermarket thermometer I can use? Install?

For about 5 bucks you can buy a thermometer that has the temp reading on a little glass encased circle about the size of a quarter,, then that is on the end of a 5 inch nail looking thing. Just drill a simple hole in your smoker about the area of where you food cooks. I'm talking a drill bit the diameter of two strands of spaghetti.
Stick your thermometer in the hole,, and your dialed in.
